Gunkote is applied really thin. It was made that way so as to not interfere with close tolerance gun parts. It is very easy to put it on to thick though. I precote with k-phos but haven't done enough testing to see if it makes a difference. It does become much more durable after a few weeks of application.
I have used carbon knives( green river knives) on the seal hunting ships along the Labrador coast and New Foundland.
On the salt water sea ice I Never experienced rusting of any sort. Clean the blood of the knife in the snow, Wash the knive in fresh water when back on the ship, dry of and coat with some seal fat or Vaseline. Used the same green river skinning knive for 3 years on hundreds of seals.
Never thought about stainless. Knife develops a bit of a greyish looking patina. We carved wooden sheaths out of pine or spruce planks, two halves pegged together with little wooden pegs. Some guys were very good at that.
We carried sharpening steels with us on the ice for touch up work. Managed to keep the knife razor sharp for the whole trip, so did everyone else. There was always a couple of guys really good at sharpening and teaching greenhorns to Sharpen a knife.
