like most wild game it is better if you let it marinate one full night in a mix cognac/red wine seasoned with thyme, sliced carrots, small onions, pepper.
Then brown it both sides in a little oil and cover with some of mix, including carrotts and onions plus some lardons.
Let simmering a good half hour and enjoy with pastas or rice. This (and a few other recipes) is the only reason I miss ex-MoL

In the Sündgau ( part of Alsace near Switzerland) the specialty is fried carp in semolina. The best way to eat that too fat fish. 😋
Come for the knife content - stay for culinary tips. Sounds delicious! I propose a thread for stews made with meat processed by the bunny knife - rabbits, hares and jackalopes only!

A little off topic, but I have a friend that's really lazy and really into hunting and cooking.
One time I ladled out some of his rabbit stew.

A rabbit carcass came out, leg stumps pointed right at me.

Just picked up these two this morning from a second hand store for $90. While they are not bunny knives (and are smaller, about the size of a #14) they are very well made compared to later knives. I especially like the blade stamps.

The guy I bought them from was singing the praises of the Rodgers bunny knife, and he told me the store had just sold a white bone one for $250. He said the white bone knife marked ‘bunny’ was the one most sought after by collectors.

Very tidy knife that White Bone one :cool:

Is this an 'omen' that there will be another unofficial 'special' White Bone Forum Knife...pulling a White Rabbit out of a hat :D;)
 
So no black rabbits in USA?
Al I have seen wild in the Eastern US are brown, not sure what they might have out west though. The short time I was in Wyoming I saw elk, moose, bear, antelope, prairie dogs, and mule deer, but never saw a rabbit. Here in Virginia they throw parties in my back yard (when the foxes and coyotes aren’t around) 😂
 
You may be right. My brain made the assumption it was a portmanteau of textured/delrin, but I have no actual information.
I made the same assumption, although I didn't think of it as a portmanteau. Mostly because I'd never heard of portmanteau. Now I know what portmanteau means. Having learned something new, I'm now contemplating a nap :)

Yes.... the jackrabbit (I think) is actually a hare, not a rabbit. I think they are kin to the swamp rabbits.... I tried to eat one once. Pan frying is NOT the way to cook a jackrabbit. I'm not really sure what the "best" way is. It might be in the same category as "how to cook a carp"....
Yes, a jackrabbit is a hare. May go ten pounds, size of a small dog. I killed one a few weeks ago with my daughter’s car - tore the bumper up on the poor Beetle.

I’m told that a few hours in the crock pot with some wine, herbs, and onions makes a fair meal of one. I’ve been quite satisfied eating cottontails, though.
