I don't hunt much anymore (too many idiots in the woods), but I do have a Marlin 336 .30-30, as well as a .54 cal muzzle loader for Elk (lived in Colorado for a few years). I prefer sheath knives to folders for hunting, since I find cleaning guts out of slipjoints to be onerous.
I generally prefer the blued steel and walnut look, but after years of trying hard to be a "traditionalist" I'm having to recognize that there are situations where modern materials simply make more sense. I don't think I'll ever develop a warm spot for plastic stocks, but stainless has its place, as does good laminated wood that doesn't get saturated in the moisture.
I met a guy at the range a couple of weeks ago who had much the same to say. He had some $1200 into a nice Weatherby that he now no longer wanted to take into the wet, rainy Oregon woods. He was sighting in a composite stocked Winchester 700 with a baked-on finish.
So after years of divesting myself of Glocks and other plastic guns, I recently bought a couple more (Walther PPS and a Glock 17L), and I have an AR that I built from the ground up (very little plastic). My BR rifle is a Savage with a stainless barrel and lam stock. But I do own a bunch of older S&W revolvers, too, as well as single action Rugers, so I'm all over the map...
