Heck, I'm half that age and I already say that.I knew a very spry fellow in his 90s (he was my great-grandmother’s “gentleman companion”) and if you asked him how he was he’d always say “well I woke up so it’s a good day.”
Although interesting in it own right...i dont treat my knives like that. I dont chop anything with them. I prioritize slice geometry through soft materials and the ability to resharpen over many years of use....so i suppose thats my answer why not all hollow grind industry wide...differing expectations from the tool.

I did that with habañeros once. Once. Hours writhing in agony, washing and running cold water to no avail...I’m going to assume, growing such a fine looking crop, you’re an expert.
I learned a valuable lesson not long ago.
Always wash your hands after using the toilet.
When preparing jalapeños..wash them before too!
