I can't help myself. Every time there's a new king of Scoville, I have to try it. I'll keep trying them since I just have to know how hot they are.

Went thru a phase like that, but was like 30 years ago. Think at the time the highest rating for a sauce was like 300k...they laugh at that now.
 
We have a "Firey Foods" festival every year here in Albuquerque, NM, and it attracts vendors from all over the USA, so you can try all kinds of hot sauces when you attend. There are always a few people that just have to try the hottest stuff and regret it - you can spot them chugging quarts of milk or trying to drink honey at the ends of the aisles. I've tried a lot of the various sauces, and at this point I'm quite happy with habanero-heat-level sauces, and I'll leave those crazy heat-level sauces to you gluttons for burning GI tracts. 🥵

I miss New Mexico green chiles. The Taco Box in Farmington is fantastic too!
 
BTW, jlauffer jlauffer , I saw that you tagged me in on that W&C thread, but I just don't have the patience for those dogpiles like I did years ago. Plus, there's a couple guys that need to take their meds in that convo.

But yeah, I'm not sure if he's mad at me or not...he was hitting me up by PM daily for a while until I tried to gently explain I didn't need a pen pal and to be updated constantly on their lives.

Oh well...

A lot of NM green chile development work is being done at New Mexico State University. They've worked on developing green chile strains that are more uniform in size and heat levels. There are other folks in New Mexico working on hybridizing some of the green chile strains for higher heat levels - in some cases, they've developed green chile peppers that are hotter than habaneros! There's a restaurant in Sante Fe, NM named the Horseman's Haven, and they have developed some ridiculously hot green chile varieties. Their "level 3" green chile has to be tasted to be believed. But they lost some of the good green chile flavor in attaining that heat level...

The flavor is the most important thing to me. Love hatch green chile!

Yeah I should have read the OP again before tagging you. Thought he was mad at you for locking the thread(s), but after reading it again, seems he's mad at those that caused it to get shut down.
