Just had homemade (except for the glass noodles) beef japchae for dinner (using tri-tip). :cool: :thumbsup: Gotta love the clean buzz from soju!

Always a local favorite. The roast beef you see in these shots is from them (they’re a very successful local butcher shop, for the rest of you guys). A couple others that vie for the title of best Beef on Weck are Schwabl’s in West Seneca, and Bar-Bill in East Aurora.
I spent a LOT of time in Buffalo doing wind tunnel testing at Calspan (and it’s various other incarnations) from 2003 - 2021. Right across Genesee St. from the airport. Got to know the best local spots to eat haha. There's a Charlie’s at the NW corner of the airport property. Their prime rib sandwich lunch special (on Wednesday I think?) was one of my favorites!

SpyderPhreak SpyderPhreak Not far from the area where I grew up, and I’m familiar with all of it. If we’re talking bad food, then surely you’ve had the unparalleled Zorba’s Texas Hots shit canoes. When I was slightly less old, their ‘buy six get one free’ takeout deal amazed and appalled many, as my skinny ass would pound down all seven of those effortlessly. Funny how you pay for this behavior years later…

Calspan, Northrop Grumman, Moog, Eaton… lots of aerospace/defense companies here, for sure. It’s a unique area that quietly has a tremendous impact on any number of industries. To keep it relevant to a knife forum, if you drive fifteen minutes out that same street that Calspan is on and make a left, you’re pretty much at Niagara Specialty Metals, where damn near every knife steel alloy worth talking about is hot rolled into sheet, and distributed globally.

All in this shitty little dump of a Rust Belt town that refuses to die, despite constantly being buried under feet of snow. 😉

Makes us resilient.
