Random Thought Thread

I used to be into refried beans but now I prefer charro beans. Beans should always be made with bacon.

Why do Mexican people mash beans?

Ever heard the old nursery rhyme:

"Bean porridge hot, bean porridge cold,
Bean porridge in the pot, nine days old."
?

Folks used to make a big pot of frijoles and leave it on the stove until it was all et up. As long as you get it hot once a day, the frijoles will keep for a good, long while. Eventually, after a couple of days of being consistently re-heated (or perhaps... refried?) and stirred up the frijoles break down into a smooth mash. Still perfectly delicious and unthinkable to waste good food.

People inevitably developed a taste for them and now cheat a bit by prematurely smashing them up in a pan. Most canned refritos are pretty bland, just a little salt and maybe a bit of bacon/pork fat. Easy enough to make your own, salted pork is a frijole's best friend.
