Recommend a knife for my uncle turning 60

Can’t go wrong with the classic Buck 110. Ebony and S30V really spruce up the original version. The sport series if you want something a little lighter with a clip. I have and use both regularly. And the OL loves them as well.
 
Echo the Buck 110 or 112. Depending on how soon you need it you could have one done up in the custom shop. A good buddy retired and I had a 112 done up with elk handles and nickel silver bolsters. Around $160 when all was said and done. It’s uniquely his own and meant to be used.
 
I'd recommend a (Buck) Custom Shop 501.
I know I'm an outlier; but I prefer the 501 over the pocket bricks known as the 110 & 112. (I've already got a fixed blade on my belt, and maybe something else; so belt carry of a 110/112 doesn't appeal to me.)
 
Hey hey! It's that time again, meaning, help me pick out a knife! Yes, of course I could do this myself but I would really like some input and curious to see what recommendations you have. Deets are below:

- as title says, this is a gift for my uncle's 60th birthday
- I'm thinking something "nice" but not a safe queen
- he is outdoorsy type into hunting and fishing
- doesn't necessarily have to be a hunting or fishing knife, but certainly could be
- refers to himself as a "poor man with a dream," ie: frugal, walmart budget, not into flashy or extravagant
- he's a laid back, no frills kinda guy
- saw him recently and he carry's a Kershaw, not sure what but 90% sure its a leek
- I lean towards Spyderco but all brand ideas welcome
- realistic budget is under $200, but out of curiosity would love to hear recs from any price range for this event

EDIT: folder OR fixed, though I lean folder for generally higher carry-ability (debatable obv)

If you're open to handmade, designed and made to be used, I have a couple ready to ship that would fall within those requirements. All fixed blades and depending on his preference, 2.5" blade, 3"blade, 3.75", 4.25" blade and handle sizes to coincide with the blade length while retaining a 4-finger grip.

For folders, the manix 2 is an ugly knife that is an absolute workhorse. Sounds like it might fit his character well. I prefer the lightweight variety.

For sometbing like the kershaw leek, the civivi hadros is pretty cool. I like the wood handle and damascus variation, but that may be a little loud.

I would say Cold Steel ultimate hunter.!! Runner up Spyderco Stretch (g10/Zdp if you can find one but any will do! )
Honorable mentions GEC23 (harder to find) and Benchmade Crooked river.

I am a hunter and have used them all. I have used the Ultimate hunter and 23 on the most game. Both incredible. The other two do a great job as well!!

Would you want to post a pic here or dm me of the fixies? I would think either the 3.75 or 4.25 but wouldn't rule out the 3 inch too.
 
Also, for what it's worth I'm in NH right now and will be stopping in to the Kittery Trading Post this week, so might (haha I mean obv will) look around there too see what they have too!

Bottom left: Bush camp with 4.25" blade, 4.5" handle
Top left: Michigan utiliy knife (MUK) with 3.75" blade, 4.5" handle
Right: 24/7 with 3" blade, 3 7/8" handle

 
Check out White River Knives, they are some of my favorite hunting/camping knives. By the way I’m 66 and could be described similar to your uncle. Well except for the fact that I I have every knife that has been suggested with a couple of exceptions!
 
I been carrying one of these White River Backpacker's for about a year now. No clip, just in the sheath.
They fit nice and flat in your pocket and come with several color handle options.
