Reprofiling an edge

What edge would you rather have?

Depends what I'm doing with it. The top one will be a superior working blade in my experience, easier to restore quickly.
 
The chill doesn't happen to me . I do laugh at it but for different reasons I'm sure than here ! DM

I don't think theres an issue atleast I didn't know . But I'm a moderate and adhere to writings/ evidence and pratices presented by several well known cutlery authors . That stance in its self and the subsequent postings that generates strikes against the current of passionate posters here . DM

How do you do that? I've been poking around the web a little looking for sharpening tutorials, but haven't had much luck. Not anything that will get me these kind of results. Can you please share your techniques, and what you use to sharpen your blades. Or if someone can point me in the right direction that would be greatly appreciated. I would love to get my knives this sharp! Thanks!

THG is right....... I can get those results with sandpaper, natural stones,ceramic stones, diamond stones or almost any type of sharpening media. You must have a proper progression of grits starting with Very coarse and moving to very fine, its the Very fine grits that bring you the sharp polished edges and the coarse grits shape the edge. Proper shape and polish bring sharp edges, knowing howvto get there is the hard part.

Products like the DMT aligner and edge pro combined with a strop will do the same but I have always had better sults freehand so that's how I do it.

I use diamond hones and compounds for 99% of my sharpening needs.
