Salmon Recipes?

So,

I'm sitting on a freezer holding about 70# worth of King Salmon filets.

Tonight's meal was Salmon with mushrooms, onions, peppers in a white wine sauce. (prepped with a BRKT Canadian Sportsman II and a Canadian Camp Knife to satisfy the knife forum requirement) And it occurred to me that with a little forethought and planning...and a little luck finding some edible mushrooms...this could be made in the wild with REALLY fresh Salmon/Trout.

I need help...anyone out there have Salmon recipes?

I use the same vegis as you, I add some olive oil and balsamic vinegar as I saute everything.
 
do you like deep fried fish? i made some deep fried salmon with a mix of white corn meal and table blend mrs dash. white corn meal wont get too brown without drying the fish out so go for a light brown. test fry a few pieces first. the mix is good for any kind of fish or chicken.
 
This is one of best BBQ salmon or Steelhead recipe's that ive used.

1-2 TS Spicy Mustard (grey poupon)
1-2 TS Rum (capt.morgan is good)
1-2 TS Brown Sugar
2 TS Butter

Mix all ingredients and put on fillet and BBQ
 
I like to bake mine. 300 degrees for 10-12 minutes.

Salmon Filet atop sauteed zucchini, yellow squash, peppers and grilling onions.

All organic veggies and Alaskan Salmon.

I tried it topped with brown sugar once...that is good. I don't like to marinade salmon. I think it has good flavor already.
 
This is my favorite

2 lbs salmon filets

olive oil

white wine or Scotch (islay single malt of course)

dill weed

italian seasoning

capers

marinated artichoke hearts

sea salt and black pepper

green onions

cilantro
On foil-lined baking sheet place the filets skin side down. Drizzle with olive oil to coat. Drizzle with wine or Scotch to taste. Sprinkle with dill weed, generously, and Italian seasoning, a Tbsp of small capers, drained. Spoon on 1 small jar marinated artichoke hearts, with a little bit of the liquid. Shake on sea salt to taste and freshly ground (coarse grind) black pepper. Broil until done, 10-20 minutes approx. Turn off broiler. Sprinkle on coarsely chopped green onions and chopped fresh cilantro to taste. Return to oven and let sit for 5 minutes with residual heat. You should be able to lift the filets off of the skin easily and lay on plate. Drizzle pan juices over, if desired. Enjoy!
 
My mom makes some of the best salmon! She uses a sauce called Thomas Sauce and just pours some over the salmon while grilling it. It has such great flavor and now I really want some! She also has a recipe using lemon and some spices mmmmmm

Here is how I do my skin-on fillets. On the BBQ, skin on, salt pepper and some lemon juice. A few slices of fresh garlic garlic.

If you have a gas grill, the key is to pre-heat and get that thing hot - really hot.
Lay it on the grill on top of the grill, close the hood and give it about 5 min. Sometimes I put a chunk of cedar (about 1" by 1" block - pre-soaked in the sink for about 20 minutes) on the opposite side of the grill.

Take a peak, after 5 min. and test it with a fork. If the meat spreads easily then you are done. If not, give it a bit more lemon juice drizzle and check it again after 1 or 2 min. Don't over cook it. It will still look really pink, but will continue to cook after you pulled it from the BBQ and put it onto the plate.

So basically - the only rule - don't over cook the stuff. Hi heat, skin on- seals in the juices - tastes great!
 
Season with seasoned salt and garlic powder and pepper. coat with bread crumbs and fry. Serve with a mixture of catsup and tobasco.
 
This is my marinade for trout, which is pretty similar to salmon:

White Wine
Olive oil
lemon peper
fresh lemon juice
garlic/garlic powder
seasoned salt
salt
pepper
Italian seasoning or whatever mixed herbs you have
splash of Worchestershire sauce
splash of soy sauce

Cook the fish in the marinade and place several large globs of butter on top of the fish.

Enjoy!!!
 
Well if you don't want to cook it..

Mix mayonnaise and Liptons onion soup powder together, then slather on the top of the filet (skin side down). Add some onion shavings at the top or add chopped scallions. Bake no more than 20-25 minutes. Don't let the mayonnaise burn! Maybe try putting under foil for 10 minutes, then bake without the foil for the rest of the time.

Damn Bruce, that looks awesome!!! I love fresh fish. Salmon is one of my favorites.

I tend to Grill or Bake mine. I do marinade it from time to time in Italian dressing, beer, and ginger. Awesome. Give er a try!
 
lightly rub with salt and peper, grill and a few minutes before its done cover in Mrs butterworth syrup and let glaze. sounds strange but its really good.
 
rub with olive oil, chopped fennel tops, lemon zest, salt and pepper. Skin side down on the BBQ. flip once.

Chop cucumber, red chile, add to yogurt with lemon juice and olive oil. Stir just enough to marble the sauce with olive oil.

Take salmon off the q, pull off the skin and put in on the grill for about 30 seconds to crisp up. flake salmon onto a plate (I like it cooked quite rare) add a big scoop of your sauce to the center and break the skin into pieces over top.

Serve with fresh bread and butter.
 
I like put some black pepper and salt on top and cook with under a broiler for 10-12min. Salad on the side.. For the salad dresssing i use Olive oil and some fresh lemon salt and pepper to taste add some Garlic... good healthy...
