Can anyone direct me to any head-to-head edge-holding tests on Scrap Yard's S7 steel? That would be controlled tests between SR77 and other blade steel(s) showing how the edge compares in slicing/push cutting/chopping performance, side-by-side?

I think someone has done some edge work on this forum but I cannot remember who. The SR77 will have better edge holding than standard S7 due to it's slightly higher Carbon content and I think it has a little more chrome in it for added wear resistance, both of which are two complaints about S7. My SR77 blade seems to hold an edge between 5160 and 52100. It holds better than my 5160 RD and but not as good as a custom 52100 blade I have at an Rc of 58-60 on medium grit materials. Of course it is tougher than both.

The satin finished SR77 blades come with the sharpest edges I have seen on any knives. Nearly Razor sharp. The coated blades don't seem to have as good an edge, but still extremely sharp.
 
If it holds an edge better than good 5160 with that level of toughness, that's impressive. Sounds like serviceable performance all around. Thanks, Cobalt.

yup. Remember that a better edge in one might outweigh the other. If I had to say what it behaved most like I would say like a cross between my Tops 1095, my ICC 440C and the RD9. Corrosion resistance is better than 1095 and about the same as 5160. In fact it is very similar to 5160 in the corrosion department in that it gets surface rust easily but no pitting. I think that wear resistance is better in 5160, but edge toughness goes to SR77. I chopped with both and the SR77 had no visible degradation, while 5160 did. However, digging with both the 5160 seems to last longer.
