Serious Cooking Fanatics?

Hi Folks -

I received the JK Chef's Knife the day before I was to leave for my annual trip to Vegas for the international dart tournament (thought I was further down on the list....)

I took the knife to Mark Henningers house so he could use it and review it (hopefully he posts his thoughts here soon) -

When I returned last Thursday, I called Mark and went and picked the knife up so I could begin my time with it -

To reiterate John's specifications for this "small" Chef's Knife -
Overall Length: 9 3/4"
Blade Length: 5"
Thickness: 3/32"
Steel: O1
Handle: Black canvas micarta with aluminum pins

It is not that small, and I would call it JUST RIGHT, actually!

The knife is very "santoku" in appearance and abilities as well.

There is a great rise to the heel, which provides a plentiful space for fingers while chopping and dicing. Additionally, the slight belly to the blade allows one to "rock-chop" if one has those skills.

In hand, the knife is balanced and provides an excellent grip; I have come to appreciate the black canvas micarta for it's texture and positive grip even when wet and slippery.

I chopped up some snacks for my lunches this evening and took some pictures of the blade while I was working.

I put a quick touch-up on the edge when I got it before I sent it to Mark, and he commented that it is very sharp.

One could have shaved with the knife when I delivered it to Mark, and I made some very tiny curls in receipt paper with it as well.

John did some grinding on the spine and it is little touches like that which show the care he put into the knife -

I will keep it until Monday, I will be doing a lot of cooking on Mother's Day, so I would like to keep it and use it that day -

I really love the knife and I just may order one and replace my trusty modified wharncliffe for kitchen duty!

Once the Knife makes it's rounds can you put me on the bottom of the list as I would like to try it and if it cuts as good as it
looks I will want one.!**

Thanks Jeff - You won't be disappointed with this one - maybe John could do a limited run with serials - I would be in for #2 -

It is a great knife for kitchen use, and I will be putting it through some more paces this evening - making my cajun stuffed pork tender filets for mothers day, doing some prep work tonight.

#1 and #2 are already spoken for. :)

I think it's a great all-arounder for either home or camp kitchen. If you are going to have one go to food prep knife, that pattern is a good choice.

well after trying to take some shots no less then twice without the memory card in the camera i was ifnaly able to get it together enough today to take some pictures, this time however I forgot to include the little flashlight Andy sent along with it, doh!

I always forget, being a wood handle fan, how much I enjoy Johns micarta, it's grippy, pleasant in the hand and pretty to :)



I'm going to see if we can't put it to some use in the kitchen soon, then maybe whip up a quick sheath for it if no one objects, it just doesn't seem right to cart it around in cardboard ;)





My only thought so far is that while it is extremely comfy in hand I might pull the scales a little further up the handle, we'll see how comfy it is in this grip when working first though :D
