Wouldn't 3M scotchbrite pads scratch up everything the knife touched?

I wouldn't think so once it was embedded with epoxy and sanded down, but I'm still trying to picture what it would look like. AND I don't know that I want a knife that makes me think of scrubbing pots and pans, I love to cook, I get enough of that thought already :D
 
They make many "grits" of ScotchBrite pads with the finest used for scratch free polishing of plastic and such, far smoother than the green kitchen type. I have a few boxes around of finer grits in different colors used for various finish work applications where sandpaper isn't flexible enough to get in some areas.

I'm thinking I'd like to see the highest grit white pads, which are quite soft, embedded with darker blue epoxy. Or maybe the medium grit dark gray pads with a light blue epoxy or maroon with white epoxy :), lots of options and I believe the exposed fibers would add nice grip once sanded down smooth.
