Belt grinder-no question. You will get a much better bevel, and it should take very little time.
Keeping the blade cool is important, but not as important on stainless steels as it is on carbon steels.

Haha a little late, but right on the money.

I'm not sure that I would have done all of the flat grinding on the grinder since I'm still freaked out by the platen (and cheap belts), but I'm very happy with the convex final bevel that it put on the knife.

I've learned sooo much during this project, and I'm just now starting to think about the grinder as a viable sharpener... for me that is. I know many use them with a great deal of success.
