Great vids. Stone holders can really help, and can be had for fairly cheap and I think you would like them. I switch from hand to hand when I flip the knife, but I am fairly ambidextrous so for me that works. I also prefer lapping film on glass for stropping as I can sometimes round over my edges on leather, but you definately have the touch down on the strop. In the end our edges end up really similar: mirrored bevels that easily whittle hair. As you say it is what works for you and others may find something else that works better for them. One thing we are identical on is locking the grip in (as Knifenut points out) to keep the angle locked in. I think however someone can figure out to make their sharpening work around the basis on keeping your grip locked in as you show is going to be that person to get excellent results.
