If you need to maintain the Sharpmaker is the best for me. If you have to repair a dinged up edge or put an entirely new bevel on then I like Norton Comination India bench stones and oil. I suggest you get a 4-5 inch butcher knife , dull it extremely on purpose, put a sharpie mark on the edge, and learn how to reprofile the edge. Sooner or later IMO you will have to do it on yours or a friend/family knife.
