One of the things that Jerry Fisk will talk about when he is stropping his knife on his hand is that doing so aligns the grain on the teeth such that they are perpendicular to the edge. This is the happy medium between a knife for push cutting and pull cutting. Those tiny micro-serrations left on the edge are what he is talking about, and getting those in the right place can take a knife from good and sharp to stupid sharp. Figuring out how big to leave them is another conversation all by itself. For all intents and purposes, after I get the shoulders knocked off, I go from 400 grit, to 600 grit, to black compound on a leather strop, to dremel red jewelry polish paste on a leather strop. My leather strops are wood backed and not free standing straps of leather. As you go through the process, lightening how much pressure you apply will further refine that edge, with your last swipes across the strop being only the pressure caused by the weight of the knife. A final step some take is to then strop on just plain leather, or a piece of dense cloth, like the duck cloth they use in work pants. Make it to the gathering and we will show you how to get it done.
