Sharpest knife ever...

Zdp-189 endura edge pro type sharpness it was almost toilet paper slicing sharp, a few hours on the edge pro it slices t.p like a champ.not literally a couple of hours but a pretty long time zdp is a pain to sharpen.

Spyderco seems to have impressed me the most in terms of factory edges. My Stretch ZDP-189 had a mean edge.

A toss up between my Blackjack model 1-7 (convex grind), and my Spyderco Superleaf. Although, I think the Superleaf may have a slight edge over the Blackjack. Sorry for the pun.

All the many Mora knives, and a few Cold Steel knives, I have bought have been razor sharp, and most others have been dull and useless out of the box. A knife that is not sharp and ready to go with a useful edge when you buy it is basically junk imo. It might become a good knife if you spend many hours on creating a new edge profile and sharpening it but if I would have worked for the same amount of time I could sometimes have spent several times the amount of money I spent on the knife in question, and have gotten a knife made by someone who had the skill, intelligence and courtesy to make a knife ready to use. I enjoy knives and I enjoy sharpening knives, but any professional who buys knives to use on the job should imo basically not accept anything but a knife that is ready to go out of the box. It's like guns that need all sorts of tweaking and 'breaking in' before they are reliabale and work ok. There is just no excuse.

Probably an Endura 4. I have had a few factory edges that would whittle hair.

That being said. I still have never received a knife that I could not improve the edge on.

My sharpest from the factory was my Bark River GamesKeeper Drop Point. The knife that holds its very sharp edge the longest is my Benchmade D2 folding bone collector. Still shaves after one Elk (without any sharpening).

Spyderco, Al Mar, Ontario, Emerson, Cold Steel, CRKT, etc. and all my blades were at least shaving sharp out-of-the-box. However, my Cold Steel Recon 1 was a cut (pun intended) above in that it was scary sharp -- like cutting toilet paper sharp. In fact, upon removing the knife from the box I immediately cut myself and to use superglue to close the wound. Definitely the sharpest from the factory.

None of my folders came sharp, including chris reeve knives. But I am spoiled...

my yoshihiro yanagi came very sharp, my misono carbon was ok.

Hey Hwang, I've been meaning to ask you for awhile...You're a sushi chef right? And you apparently maintain your steel daily and keep it very sharp. I'm curious about your sharpening technique. I'm guessing that someone in your line of work, by necessity, must know a thing or two about sharpening. Anything you could share?

If you have already, then maybe give me a link. If you haven't then maybe you could start a thread?

Thanks,

Lance

One of my Doug Ritter RSK MK1 w/S30V is extremely sharp out of the box. I have 4 DR Benchmades (2 are minis) and this one was much sharper than the others. So sharp that it bit me when I just touched (not bumped) the edge with the back of my finger.

The others are certainly sharp, impressively so, but that one full size grip is a "cut above" (pun intended).

my reeve was laser sharp out of the box. weird.

I understand its sharp for 99% of people here, for a sushi chef it not satisfactory.

I have 3 chris reeve knives and yes they came sharp but compared to my yanagi they feel like plastic utensil in sharpness.
