Sharpest knives.

After all these years and brands, the sharpest have been Spyderco hawkbills and Reverse S blades

Followed by Cold Steel's folders, surprisingly the XLs were the sharpest

Without question it was my Gihei blue #2 gyuto! That thing was mind-blowing out of the box. As far as edc knives it would either be dragonfly in zdp189 or a pardue mini grip in 154cm
 
Couldn't have said it any better. They will cut the hell out of you!

I handed one to my co-worker for some "show and tell" and 10 seconds later handed it back to me with blood on it.
He still swears he never touched the blade.
Now that's a sharp knife. ;)
 
I just got in a ZT0095S90BLK. It is the sharpest, by far, of any knife I've ever owned, sharpened, or had sharpened.
That S90V in a 0.120" thick blade really does the trick.
 
Why do people use their thumb to "check the sharpness".

I check the "drag" with my thumb to indicate which direction I need to work a burr when sharpening but in the end I have better ways to check sharpness. Then there's my intended usage and that makes a difference in sharpening methods.

I laugh when I watch online videos of retailers detailing the features of a new knife and they're holding the knife with their fingers right on the cutting edge.
I'm not sure if they checked the sharpness before recording but I've pulled a few knives right out of their boxes new that would have drawn blood if handled that carelessly.
 
A Buck 124 Frontersman. Right out of the box it was the sharpest thing I've ever held in my hand with the possible exception of a razor. I nicked my fingers twice just drawing my finger across it to see haw sharp it was. Nasty sharp.

 
Rockstead Higo and then Chris Reeves Mnandi. I carry the latter all the time. I'll carry the Higo if I can stomach the rare looks carrying a sheath in a public place. I should have bought a clipped rockstead.
 
My Bradford Guardian 3 and We 616 were the two sharpest out of box. Lionsteel kur and Spyderco Pattada were some of my sharper ones too.
 
Hi! The ones I have been impressed with out of the box were the Mcustas, PM2 gets also my “badge of honour” for sharpness. :)
