Sharping thick hunting knifes (Aogami Super and Shirogami #2 steel

Respect, but he didn't dig the steel he's using, out the ground himself.


I understand wanting to be romantic about this. But I have older Benchmade's that'd blow his stuff away.

if going that route every thing aside from tamahagne steel is recycled steel. but fair enough

My prime suspect is your 2K stone.

You have two different well-made knives with two different well-respected steels that both responded well to the lower-grit stones.

And the OP seems to have the sharpening skills down.

So that leaves the 2K stone. Perhaps it is damaged or filled with swarf.

You might want to clean it well and inspect it closely, and then try again.

Thank you for the feedback. It is possible it is filled and another lapping is required as I also use them for chisels and plane irons. I won't lie I have slacked on lapping since I got a set a Naniwa nagura stones of the same grit to "lap" in place of my atoma diamond plate.
 
The two knives in question Yoshihiko Akitomo (Red Orca) He is a trained sword smith and both are forged in the
15 layer Koubuse lamination method. Both hand forged

Aogami Super(blue paper steel) carbon steel
Shirogami #2 (white paper steel) carbon steel

Top one is Shirogami bottom is Aogami

I'm not going to pretend you know the answer to the issues you are having but check your stones for flat and know that the grind on these handmade knives will be less than perfect.

Those knives have a good amount of flat profile to them also so if there may be a frown to the blade.

I sharpen the Japanese outdoor knives with a micro bevel just like single bevels, chisels ect.
