sharpness test

I use the same test except I use a page of a telephone book.

Same here, I use the paper of the A.G. Russell catalogue :). As I have said a few times, it is possible to do it with cigarette paper, but it gets pretty difficult.
 
instead of full stands, how about 5 degree wedges to stick under the stand

for leveling the upper surface, all I can think of is if - do you hold the blade with the flat (saber/low hollow grind) parallel to the ground/spine perpendicular, or do you place it with the primary grind parallel to the ground.
 
I don't know how Nozh is doing it, but when I was playing around with an angled stone (I used wedges under a japanese waterstone holder, not as nice as Nozh's setup because the wedges tended to slide somewhat) I was holding the handle parallel to the ground/table. Since you are looking from the top, you can not really see whether the blade is parallel anyways, but you get a petty good feel for it, when you hold the handle parallel to the ground.

I support my stone holder to whatever angles I choose and hold the handle parallel to the counter and it works good for me. I don't get sliding because I use the backsplash of the counter to as the back up for whatever I lay my stones on (usually other stone holders) and I don't get sliding.

Yes, your setup is much more sophisticated than what I have used. I just used a simple wooden wedge underneath the base I was using anyways. I got the idea one day when I say pictures of a japanese blade smith sharpening a Katana. They work on the floor but otherwise they use the same technique as you do.

I replied to your email, but when I wanted to sent the email of I found out that the movie is 235 MB large. How do I get this smaller. I have never worked with movies, only with pictures. I took the movie with my regular film camera :(.
