I spoke with them last week. Shop credits do not show up on your online account. You need to keep track of the amount. When the payment is due for the knife, you can tell them you want to use your shop credits. They said you can always call and ask what your balance is. I would prefer the credit amount be listed on your online balance, but this is one company I am am never going to worry about going South on me. They have already gone above and beyond for me in the 5 years I have been doing business with them.
Also, you can put it in the Notes/Instructions section of your order when you place it. I do this for special requests and it works well.
