I traveled to Boston recently (August) and because part of the flight was on a regional jet, it was check-the-bag both ways. I tossed my Vic Classic and a Vic Cadet into the baggage. Both got through the airline OK, and neither "printed" on my clothes as I EDC'd them. No problem during the week visit, which involved family, family, family, and considerable time in crowds on the street and the T (subway, etc.).
I think the key here is having a knife that meets the formal (if vague) local legal specs, and you just keep it out of sight for the most part. This means no pocket clips, no fat profiles, and definitely no "tacticool" as well. And you're careful when and where you haul it out to use.
In regard to that, part of the reason for carrying Vic blades is that Swiss Army Knives are widely seen as innocuous, especially in the smaller sizes. So if I "got seen," I'd probably get a pass under most circumstances, even by the constabulary.
If you're going to be living in NYC, I assume you'll be taking wilderness hiking or camping trips outside the city (Adirondacks, anyone? Vermont?). If so, you'll want something better than a street-legal-NYC knife. But keep that with your camping gear, and carry it only in the car ot backpack until all you can see in every direction are trees and yet more trees.
Above all, the secret to passing unnoticed by the Law and the Smugly Righteous in a city like NYC (and other big, liberal cities) is to look completely ordinary and unthreatening. You'll know better, but they don't and that's the, um, point.
