Skinny ASH to Kitchen knife Progress PICs

Look good so far! :thumbup: I do agree about the holes though. May want to cover or fill them and and think about an alternative for the handles.

you could just make two new pin holes (or however many you want) in different locations. A carbide bit in a dremmel tool, or bit for drilling hardened steel. Drill two new holes, use what ever pin material you want (HHMMM, mosiac pins) Looking good so far.
 
Talk all the smack you want but this knife is starting to feel real good for the kitchen. I suspect that once it is polished out and sharp some of the nay-sayers maybe rethinking this project.

You guys are right about the holes. I am pretty sure I am going hidden tang before this is over.

Well here it is done for now.... I may thin the handle some more and do a hidden tang someday but for now she is done. I cooked dinner with her and she was GREAT! Wife even likes it.

nice job, you've got more sand than I do cause I could never bring myself to do such a thing. I have to prepare myself each time I sharpen one of my Busses, but that is me.

Please don't get me wrong....I ain't baggin on you bro...I like a good project just as much as the next guy....but I'm not real sure about the thinking behind this one. Just curious.

Thats it exactly. I really wanted some INFI in the Kitchen. The NICKS are absurd in price. 500 plus dollars for a Santoku....now that is a big fat WHY?

I wish you could feel this knife now.... It does not look that great because of the offset screws. It feels fantastic in the hands and man does it cut.
 
Wow. Impressive. If I didn't have a NICK, I'd want one. :)

Aside - we did Meat on a Stick night at church last night. I hacked up about 30lbs of sirloin and 25lbs of chicken on Sat with my NICK. That was cool. That sucker sliced thru everything without a thought. And it wasn't even super-sharp.
 
Love what you have done with that Knife Bro!

I love trying out some of my INFI in the kitchen but could never truely appreciate the Nick. This make for a refreshing change and nice to see someone brave enough to make such radical changes(by hand of all things?!) to their INFI with success!

This mod REALLY changed the knife and I used it last night to dice onions, slice cucumber and bell pepper for a salad. This knife works so well in a pinch grip now its not even funny.

You can rock in on a cutting board just fine. Its is still a bit thick at the spine for a kitchen knife and would transition nicely to camp knife.

But the edge is a work of art. Nicest convex I have ever done by far. I hand shaped the blade and the convex goes almost to the spine.

For some reason food does not stick to this knife at all.
