If I have to sharpen it later I do it. No big deal. I cut food on plates at home too. I guess if you have the latest super steel and you never cut anything, the edge will last forever for forum bragging rights but life’s too short. I want to eat my steak today thank you.

I practically lived on steak until somebody decided that beef and gold should be valued right about the same per ounce. Having said that when I do order one at a restaurant, I have no qualms about using my own knife. Whichever one happens to be with me at the time.

I am That Guy who uses either whatever flashlight I'm carrying, or the flashlight on my phone to read a menu in a super dark restaurant. All these joints trying to go for an intimate "vibe", well intimate doesn't have to mean "Have the house lights so low, nobody can see anything".

I walk around in the light of the moon (or better yet, full darkness) so my flashlight doesn't spook the trout.
