Hi all,
I've got this nimble little gyuto up for sale today. The steel is 52100 heat treated by Peter's to RC61. The buckeye Burl is pared with charcoal gray G10 bolsters. The liners are white and charcoal gray G10. The handle is fashioned for a smaller hand or to be used in a pinch grip. It makes for a light and nimble kitchen slicer. Perfect for Mother's Day for instance :D
