This one is still available so I'm dropping the price on it.
It's a sleek AEB-L gyuto that is lean and mean and ready for action. It's very nimble for its size weighing in at 7 oz and a balance point just ahead of the front of the scales. The scales are beautiful striped Cocobolo from @Greenberg Woods. It's hand sanded to 600 grit and the grind is compound full flat with convex towards the edge.
SPECS:
OAL: 14"
BLADE: 9" long, 1 7/8" heel height. The blade has been hand sanded to 600 grit. The grind is compound full flat/convex. The edge is down to 0.006" before sharpening. The spine and choil are rounded for comfort.
STEEL: 0.098" AEB-L stainless steel heat treated to RC62 including LN cryo.
HANDLE: Striped Cocobolo with bronze pins and and black liners.
