Do you know how thing you take the edges before applying the final secondary bevel? Or just how thick they are behind the secondary bevel?

Depends on the knife. Always less then 1mm or even 0,5mm for this steel (choppers). For smaller knives almost 0 usually. If chopping wood this is surely enough for NZ3 as it has no tendency for cracking and crumbling and if you doing it right you do not have to worry about cutting edge.
