Good evening,
This is a new profile for me. It's a very thin profile that I'm calling the Scalpel. It'd be a great paring knife or bar knife. The steel is Vanax, which is third generation powder metallurgy nitrogen stainless steel from Uddeholm. It has very high corrosion resistance because nitrogen replaces most of the carbon. It is heat treated to RC60-61 including LN cryo. Vanax steel has been extremely hard to come by since the pandemic. I'm not sure when I'm going to see it available again.
The handle is K&G stabilized Karelian Birch. This one is offered at special "one-off" pricing and doesn't come with a sheath.
SPECS:
OAL: 7.5"
BLADE: 3.25" long, 0.75" wide. It has a 400 grit belt finish The grind is hybrid flat/convex which is down to 0.010" before sharpening.
STEEL: 0.13" Vanax nitrogen stainless steel heat treated to RC60-61 including LN cryo.
HANDLE: K&G stabilized Karelian Birch and natural micarta pins
Sheath: Not included
