Specialized pocket fixed blade suggestion...help

Care if I flip things on you? Everyone says that you should get a fixed blade because it's easier to clean but what if you're in a rush and can't clean the blade really well before you re-sheath it? IMO, a modern folder is better for food prep on the go because the blade doesn't touch the scales so whatever is on the blade won't gunk up everything else. And, if it does you can disassemble the whole knife and clean it when you get home. You can't really do that with a sheath unless you get a kydex one that you can take apart. Food for thought.
