Squirrel ... it's what's for dinner!

Our season starts oct 17th. Cant wait to get some. I mostly take a shotgun as Grouse are in at the same time. Both good eating.
 
I marinate the pieces in a mixture of soy sauce, a good vinegar,mustard ,onion , then roast.Great finger food ! With a salad and homemade bread.
 
There are a lot of great ways to eat squirrel. I think we mainly had it rolled in flour and fried served with mashed potatoes and gravy and some other vegetable as a kid but I've pre-boiled and de-boned it and made squirrel stew and squirrel hash, I've made squirrel pot pies and just roasted on a forked stick over a fire many times. This is one of the reasons I've so been looking forward to Autumn.
 
A tip. Squirrels can carry a form of mad cow disease. Many hunters (at least in Kentucky) eat the brains. I would advise against it.

True. A form of kuru/CJD. I avoided the spine & brains where the prions are said to be.
 
Brings back memories, When my brother and I were young but old enough to drive. We would go the spend the weekend with my aunt in mississippi and we would slaughter some squirrels. We had fried squirrel for breakfast ,squirrel in the crockpot,squirrel with rice in gravy,we had squirrel just about every way you could eat it. Good memories.:D
 
Grab a recipe for chicken cacciatore and do it up with squirrel or rabbit.
I eat it every couple of weeks.

It aint bad with chicken either !:D
 
Well I usually make head shots on my limb bacon, didn't know about a mad squirrel disease. You might try getting a pressure cooker, cook for short time, cool and debone, then add what you like back in the pressure cooker to make your stew. Make sure you pull the weight off the top to release the steam and pressure, then cool under running water, then twist the lid off. Pick them up at the Goodwill cheap. Make sure they have the weight on the top and have a good rubber seal. Pressure cookers are great for flavor for any type of meat. I love to squirrel hunt. Aim small, miss small. I use my camper savage 24, 22/20 guage. If you miss with the 22, recock and roll them out of the tree with the shotgun with number 6 shot. Makes you a better marksman. Deer are nothing after head shooting squirrels. I like rabbit better.

Man, if I had a bb gun It'd be squirrel seasong in my backyard...they get in the trash, drive my already crazy boxer even more crazier...
 
I'm surprised that no one has mentioned squirrel gravy. They are also very good boiled slightly with a bouillon cube in the water then rolled in flour and fried.
 
I had dreams last night of hunting camp when I was younger. Worst hunter of the day had to cut the cabbage for coleslaw. For some reason, cabbage with just salt/pepper and vinegar go great with squirrel rice and gravy.

Rabbits taste better to me- rabbits make for GOOD eatin'! But squirrels aren't bad at all, especially prepared right. They can be a little tough and/or gamey, but in a good stew, the meat's nice and chewy and has a good flavor.

And they sure are fun to shoot! :thumbup: They're wary little suckers. The ones around my stompin' grounds know what's up. When they hear me come around, they know to make themselves scarce. Squirrels are much smarter than rabbits.
 
I gutted him and checked the liver and kidneys for spots. I also cleaned off any hunks of fat that looked like they might be cysts or parasites

Hey guys, what do y'all look for when you check the liver and kidneys? The squirrel does look tasty.

Im surprised by the number of people here who have never eaten squirrel. I like rabbit better.
 
I'm one of those people that can't eat rabbit - it makes me violently sick (but it's so, so tasty). I'm guessing squirrel'd have the same effect on me. anyone have any thoughts?
 
My main complaint against squirrels is they can be really tough. Sometimes I have had to go to a lot of trouble just to get them tender enought to eat.:thumbdn:
