Start with blanks or jump into forging?

Are you doing this for enjoyment or money. I do this for enjoyment, and forging is the part I enjoy the most. Others might enjoy the grinding more, but for me grinding is the step to be able to really see what I did forging. If I was trying to make money I'd never touch a forge. It would be far quicker and easier to just buy steel as close to the final size you need, cut out a bunch of identical blades, grind them, and ship them to someone for heat treating. There is plenty of skill required in that process and I'm sure some find those to be the enjoyable parts. It's just not my personal favorite parts. I also like that forging each blade will be a little more unique and have some of its own character (which again may not work for selling where consistency is important).
