I have been extremely curious about trying some INFI steel just haven't bit the bullet since 95% of my knives are folders
 
Whatever Victorinox uses. I don't know what it is nor do I care because it just plain works.
I believe it's DIN 1.4110 stainless, German blend IIRC. Same here I have 9 total Victorinox knives making that the winner. Sharpens easy and can take a wicked edge! I can push cut phone paper on that 1.4110 steel!
 
I guess without counting if you would lump the non stainless steels as one ... 1095 - 01 - A2 - 5160 - 52100 those would probably edge out the stainless steels in total ...
of the stainless just a guess would be S35VN between CRK - ZT - Hinderer ... then a mix of everything from AUS8 to M390 and 3V

Take a look at the exchange and find a busse in INFI that would suit most of your fixed blade needs and try it out. Also might want to take a look at Busse's SR-101, it's a good steel at a much more palatable price!
 
3V followed by 1095CV.

After that its a mix of O1, A2, 10V, M4, 1055 (Kabar), some Scandinavian stuff. I have plenty of others but 3V by far.
 
H1 is my favorite and most used by far, second place would be vg10 I suppose.

i like to try different types of steel, i probably have the most in m390 and s35vn but only a few of each. the rest is spread out between many different types of steel.

im a steel snob, because time spent sharpening is a waste of life that you could be enjoying. so if i just have to sharpen m390 once in a while vs 8cr13mov which i have to sharpen every other day, that makes me happy.
 
Cpm3v by a large margin, most with the Delta heat treat. In the past it was INFI, before that probably A2.
