Steel that performs better when polished, and holds razor sharpness

I didn't polish the edges of my new DEK1 in D3V steel, but I sharpened it with my Wicked Edge 130 up to 3000 grit using WE diamond stones. It push cuts printer receipts and pops arm hair with no problem.
