Super polished edges

Recently sharpened up an older heavily used Western hunting knife, went to Shapton 8K then stropped on cowhide with A/O and Chrome ox.

i never intend to polish but the bevel always results this way with my sharpening method (1 fine stone, 1 wood strop):

and yes, that is my tooth paste. lol

A scandi grind works well as a mirror. This mirror is made of Roselli's high carbon steel.
