Support with choosing equipment for adding sharpening to my existing business.

The Viel is a good bang for the buck item for sure. I have two Kalamazoo units also. One is still in the box. A real good tool for the money if you hit a good sale at Enco. I use them both horizontally most of the time. I made a box that the Kalmazoo mounts in so I can use it both vertically and horizontally like the Viel. Platen from Mark Reich. I use the Viel for my leather finish belt as it doesn't stretch them out like the Kalamazoo does. The Viel also runs a bit faster and the platen is sized well with good placement. I use them both with the belt running away from me. Keep an eye on the pulley set screw to the shaft of the motor. Mine comes loose now and then. I only use jigs on chisels, plane irons,. turning tools, planer blades and the like that need that kind of precision. Right now I use the Tormek for those. Ideally the Sorby unit would be my choice for turning tools, chisels and plane irons just because its so much faster. Twice as Sharp for scissors, nippers and tweezers. Baldor buffer for finishing serrated knives.
