I know these are typically fixed blades, but this one does the job nicely and fits the category perfectly in all other aspects...

Nice to see this thread resurface again. I've been using this one pretty much exclusively for my small game/fish knife, and a fair bit of kitchen duty as well. With a .065" thick blade of S35VN, it's a slicey workhorse:

I'm looking for a knife for spring Turkey but I'm not ready to shell out these kinda prices yet, anyone got a budget friendly b&t?

I was thinking of getting a Victorinox poultry/boning knife for now until I have the funds for a legit blade.

Looking at that knife, I think it would work. Most any kitchen paring knife would work as well. I like the look of the Opinel paring knife better, but that's just my opinion.

The Buck 102 can be found for less than $40 and there were several recommendations for that in this thread.
 
Glad this thread got revived. I have been obsessing about a bird and trout lately. Now off to the makers area to see if anything strikes my fancy.
 
If you can bump your budget by about $10, you can get a North Arms Mallard. S35VN and 0.065" blade stock make for a super slicer! Orange or OD G10 handle options.

For half your budget you could modify a kitchen knife to a better looking B&T with basic hand tools. That's what I had in mind with this Old Hickory paring knife.
 
Started as an Old Hickory 3.25" paring knife with a clip point. I filed it into more of a drop point and then rehandled it. It's 3 1/4" blade and 6 7/8" overall length now.
 
Picked up a couple cheapos to play with. Not really what I was looking for but it'll do for a couple projects I guess.

Anyone very familiar with the Moki fixed blades, they've been catching my eye for awhile now. Supposed to be quality steel and build for the price.
