I don't have a slim version yet...though the 20.5 is only 1/8" stock and pretty slicey.
And the others I have came well sharpened by John and company.

I’m just messing with yall though. Demko makes an excellent knife. I’d probably have a few if their blades had a little more shape/grind to em. I just can’t get past that they look like excellent mayonnaise spreaders.
