The One Knife You'd Buy For a Newbie

I would be more inclined to take such a friend into a brick & mortar store and let her/him choose one.
I know for a fact that taste differs for each individual.
And I would sit back and smile each time he/she bitches about the very first gift knife I paid for her/ him.
First lesson to start a good addiction is learning what works for you - the hard way.
Personally, I would suggest a budgeted amount on the gift voucher for a start, if you don't intend to talk through the process of elimination with the green horn in the store.
 
It really depends on what kind of person that they are (ie what they are into)
I'd probably give them a paramilitary2/Adamas/940
For fixed blades I would give them a ESEE Izula (for being cheap) or a 4

For an EDC folder, the Tenacious and RAT are great options, maybe one of the Kershaw/Emerson collabs also (I own the 6k and 8k and have finally warmed up to the 8k). If you want to spend a little more then I'd say a Delica/Endura (depending on size preference) or a Kershaw Blur (Sandvik version, runs $55 or so).
 
I'd feel most comfortable recommending a Sypderco Para-Military2. Everyone has different likes, but the P2 hits a sweet spot in a number of design areas: size, ergos, lock, steel, heat treat, whatever.
 
I'd probably go with a mini grip for a modern folder unless I knew they did not have legal limits. If I knew there were no legal issues I would go with a 940.
