I tend to use the edges of the sharpmaker ceramic to do it and knock off the burr with the flat side of the ceramic. I like your idear better.

I just use the tip with a little back and forth action and then twirl it around a bit.

Dmt has a round diamond file that I use. I think mine came with the DMT aligner kit.
I also have diamond dremel bits that work good.
 
Another great Sunday Picture Show, thank you Roger! I never tire of seeing the knives from your collection. Thanks to all who post and comment in this thread.
I don't have a filet knife from any manufacturer. The fish I catch around here don't warrant the use of one. I use a 110 of 118.
I do have several of Buck's 121 Fishermans and steak knives...

Here are my boat Bucks. I have one more of the late model ones with the python colored handle, but no pics of it yet.
The bait knife would make a great hunting knife and I have seen that model with black handle and no serrations, wish they were U.S. made.

Well, it is a dandy for sure. If you ever get the chance to share some of those sunny pics I would appreciate it. Far and away the most attractive fillet knife I've seen. :thumbsup:
 
skylercstevens skylercstevens might verify but the sheath looks to be inthe style of the custom shop sheaths. This one is nice but some of the other
Stinger sheaths I have are cruder by comparison.
The Iron Mountain Knife Company is a really hard company to find out much information about, they were located in Borrego Springs, CA.
I have a number of these in my collection also, I would have liked to have a discussion with Joe Houser about what the real connection is but he is retired now.
There is also some connection with similar styled Beaver Knives, a partnership split perhaps?

Yeah that's a custom shop sheath. I think there's some backstory to that knife and Buck but I don't remember. I think Jim Gedlicks has one as well.
 
One more oddball the model 129 "Fillet with Spoon". Same as the model 123 LakeMate in design, they are listed in the 1989 to 1991 catalogs. I assume the spoon is for gutting/cleaning. If you did not catch any fish you could use it to eat the can of beans you brought along as emergency rations.

The spoon was used to scale the fish its an old technique. Its very common in tbe south to see ollder folks using a spoon to remove the fish scales as some prefer this to filleting pan fish
