The only video game I've ever seen with accurate knives would have to be Battlefield 4. There are a few fantasy styled knives, but also many that look like exact copies of real knives. The Kabar Acheron, Mora Scout knife, and I believe a Randall are a few I can think of. And by copy I mean a COPY, they are spot on aside from the logos.

The SOG Seal 2000 in the original counterstrike has logos and is very accurate.
 
I can't remember exactly which FPS it was, but one I played in the distant past the knife was called the "Combat Knife" but it was pretty clearly the good ol' Ka-bar.
 
Speaking of video game knives, anyone knows what the Far Cry 3 machete is supposed to be based on? (see pic)

The united cutlery honshu has had the misfortune of being actually cloned
And these bootleg copies have very flimsy neck carry only plastic sheaths with cord.
They are also slightly smaller in size.
Genuine made in china united cutlery honshus have some form of multiple carry sheathing system?
 
Lots of video games have very unique weapons. Its likely that the vast majority of them arent directly based off of any real knife.
