Thoughts about wasted money

Get the best grinder you can afford, START MAKING KNIVES and don't worry about what the tool will do. I made a hell of a lot os slipjoints on a howling 5700 SFPM square
wheel before I ever had a Bader.

So do I even need a large wheel for stock removal? Would I get more bang for my buck if I get a platen and small wheel attachment vs platen and large wheel?

That is up to you and something you will have to get more input on. You keep referring to grinding on a platen so I assume you want to do flat grinds; if so, the size of the contact wheel is not that important.

If you want to do more hollow grinds then the size of the wheel may be a bit more important. I forge and so do mostly flat grinds.

with an 8"-10" wheel and a flat platen you should be able to make pretty much any type of knife, add in a small wheel attachment for the tighter contours and you're good to go.
 
You won't stay in the knife making craft very long if you don't waste money here and there!!!! :D
That's one way you learn what works and what doesn't work and what your special groove in the business is!
Don't worry about it too much, it'll all even out in the long run!!!
