Just wanted to provide another update:
The large spey is proving to be the cat's meow in the food prep department. It slices and spreads with the best of them. Now, as a turkey carver, I don't know, but this is a long bladed #23. Here is some of the tasks that it has been excelling at:

Now, what I've found challenging for the spey-cardboard boxes, puncturing, drilling a hole, etc. More to come......in a couple weeks.
