... to hear that SSSSST as the blade push cuts through paper. Nothing like having a knife that is sharper than a new commercial razor blade ;)
 
Receiving a new knife and having it exceed all of your expectations!

Discovering a new class/type of knife or manufacturer that appeals to you and finding out that there is a whole new lineup to obsess over.
 
Gazing at my wife using some of our good dinner knives while eating surf and turf and sharing a glass of wine.
