"Toothy" Edge vs. Polished Edge

For me it depends on the metal.

My steel of choice is O1 and I sharpen them all to a very polished edge. Hence they glide through everything I use them on.



I have found that cheaper stainless knifes if I don't go past my 1200 grit stone they hold a edge better and there is no real differance it the final edge. I don't go higher than a 6000 grit stone on anything and for stainless it's just a waste.
 
Naw, it's toothy, just really small teeth.

I don't recommend this test, as it's stupid and dangerous. EDIT: I haven't done this on purpose, I've only done it by not paying attention.

Sharpen a knife to 5,000 japanese grit and cut yourself, you'll notice the toothy feel, really, you will, it's no where near as bad as 120/220/320 but I can still feel it, not polished, toothy.

I've been cut, I remember how it feels. right about the 1,000 grit is where that feeling is gone, from teeny-tiny teeth to almost smooth.
 
Are you sure you got that the right way round, a 5000 should be hell of alot smoother than a 1000.

I'd also strop your blade makes a massive differance, get rid of that micro bevel.
 
Very sure, Edge Pro uses a different numbering system for their grits.

I talked about the 600 and 1,000 EP grits.

Japanese grits to match are 5,000 and 8,000.

I like micro bevels, low degree bevels with micro bevels.:thumbup:
 
For me, anything but sharpest is dull. I can't stand any of my knives that can't split hair free hand. Toothy edge is just a nicer term of a dull blade, or a lazy owner :p

Another topic which will never be laid to rest. You can get a hair shaving edge off a coarse India stone and I've sharpened my Buck 425 Modified steel blades to hair whittling off a 220 grit green waterstone. By the same token, polished edges can still have plenty of bite. I've read tests that had knives cut through yellow poly rope in less than an inch of blade, yet would push cut paper over an inch from the hold point and shave hair above the skin. Very aggressive and polished.
