Without question, the number 1 spot goes to the Shirogorov Model 95. For me, it's the perfect folder. I have the 95T, with the cool tortoiseshell texturing and a glossy stone-washed finish, and the regular 95 'Smooth', with the ceramic bead-blasted matte finish. Both run on freakishly smooth SRBS bearings...
The Sebenza is a common enough choice; the Slysz Bowie is a Spyderco model that quickly became an all-time personal favorite... at least until the Nirvana finally arrives. With its 3-D contoured Titanium handle and beautifully stone-washed, modified Bowie blade, the Slysz comes closer to a mid-tech Tom Mayo TNT than you're ever likely to find.
I carry my knives mostly as last-resort tools for emergencies and self-defense, since I'm living in a land where only cops carry guns in public. But I also use them for whatever unforeseen cutting chores come up. I don't expect them to do any prying tasks, so I prefer a full flat grind or high hollow grind -- the obvious choice for deep slicing, IMO.
