I wear one piece union suits, heavy flannel doe skin shirts, and my boots stink.
 
What I own, use and sharpen: Maxamet, S110V, Rex45.
In a few days though, I will receive an S90V Millie and I am pretty curious about it.

In fixed blades I have 3V, Cruwear, Elmax mostly.
 
So far for me they are:

1. CPM-154
2. AEB-L
3. Magnacut? (Remains to be seen! My bar of magnacut arrives tomorrow)

cpm-154 finishes nicely, holds an edge pretty well, and the heat treat is simple.

AEB-L is so tough, gets super sharp easily, and is inexpensive.

magnacut has just about everything you could ask for so I’m hoping it lives up to the hype!
 
My main kitchen gyuto is made from ATB-L and I love it. It will be great to see that steel work it's way in to folders.

I don't want to be wowed by a blade I want to be able to shapen it and/or strop it quickly.
This right here. If you don’t have the ability to sharpen it and use it. Once it’s dull you have to wait to get it sharpened. People don’t realize that “older” steels aren’t bad by any stretch.
 
I'd like to amend my previous choice. I don't really care what steel a blade is. I don't use my blades enough to really notice a difference.

1) I like stainless steel because it doesn't easily rust in my corrosive hands.

2) I like carbon steel because it patinas.

3)Damascus and san mai looks pretty.
