Cold Steel (takes the cake in "variety" parameter. Also passes along savings of Taiwan manufacturing, so "value" parameter is met).

Still haven't tried Microtech but that's on the list to check out.
 
I'm glad no one has mentioned Victorinox. Two months ago I sent in a knife for repair, and they still have not responded to my request for an update.

Unfortunately my last few Victorinox experiences haven't been positive either. Last 2 pieces I ordered came to me with noticable side to side play and blades hugging the liners. Maybe they're slipping or maybe the lowered their standards on QC during the crisis.
