Traditionals and Cast Iron Cookware

It has taken me awhile but I finally put a first seasoning in my new Smithey and cooked some eggs this morning. I thought it cool that in the new year, I have a new "Cadillac" skillet and a New "Cadillac" jackknife to start the year with. I look forward to developing natural patina on both. I used the instructions that Smithey has on-line and did the stovetop seasoning method, I had mixed results. I think I am going to get out my CRISCO shortening and bake in a couple coats in the skillet using the time honored, oven process. Very nice pan Al, looking forward to trying some more demanding recipes soon, thanks again for a wonderful, lifetime gift! OH

i have been going slow with my smithey but as the posts I have made I am really getting to learn the pan. I have been cooking in it usually a wipe sometimes a little water for some tough spots then back on the stove top heat it to make sure it’s dry and a little grape seed oil when it’s hot let it cool down and it has worked really well the frittata this morn virtually came right out even with the cheese melted in it.

Online they list a few local dealers, I stopped by the one at Topsail Beach earlier this week, but they are temporarily closed (off season I suppose). I was going to buy a tin of the Smithey grapeseed seasoning they have on their website. There is another Smithey dealer in Washington NC, I will be there this coming Thursday, I may just wait on another coat of seasoning and try them for a tin if it is working well for you (and get one of the chainmail cleaning tools they offer). OH

i have pure grape seed oil in a bottle after cleaning i heat it on the stovetop and put less than a teaspoon in the pan and coat it with a paper towel then take a second clean towel and wipe it again. Their tin is easy I have used it on other cast iron it’s like paste wax so a little dab will do it. I have never used the chain mail scrubber but i do have their soft bristle brush which I have used and works very well

I was just looking thru Lehmans, Kidron, Ohio catalogue, and saw wax for seasoning or long storage.
Anyone tried it?
BTW if you’re ever near Kidron, don’t miss this place. It’s nuts!

Going to put one more coat on using the burner method in the morning and then cook bacon and blueberry pancakes In it. Thanks to Al for the paste and to S Stelth for the link to CastIronRecipes - their info got me to swear off Crisco. I was in New Bern to fish on the Neuse River earlier today (didn’t do any good with the fish) but they have a really well stocked supermarket and I got a can of the liquid grape-seed oil (same that Al had in one of his pictures) - ready for tomorrow morning. OH
Ps. Note that my most carried Case 6318 is stealthily laying on the handle - like a cottonmouth on a swamp log.

That’s looking real good. I am by far no cast iron expert but have had great luck with the smithey seasoning and also grape seed oil and avocado oil. My daughter uses grape seed oil and my son in law uses avocado and works great for them. Bruce the brush seems to work real well with any stuck on leftover with a little hot water then I put mine back on the stove and heat it put a little oil and wipe it in and take a clean paper towel and wipe it again and let it cool
 
Thanks Al, going to add one more layer seasoning with the stovetop method and then cook bacon and pancakes in a little bit. Also plan to brown some venison burger after breakfast to make a venison chili for dinner this evening. Once you started the seasoning with grapeseed paste and oil and have your initial seasoning done, do you use any oil you want after that or stick with the oil you seasoned the pan with? In my old skillets I use Mazola Corn Oil, Crisco shortening, and various brands of vegetable oil interchangeably. The only oil I don’t use in a cast iron pan is Olive Oil (it gets gummy) although I use Olive Oil in steel pans and on foods on the grill (to make my doctor happy!) The entire oil selection is confusing with too many choices and with many discrepancies between different websites. The website Stelth furnished explains the oils well, but its the interchangeability in the pan that confuses me. Anybody here want to chime in that would be great. Thanks, OH
