Two 8" Chef Knives - Jade G11 and Stabilized Maple Burl

I recently finished two Chef Knives that I am very proud of...

Both of them are from 3/32 O1, Heat Treated in my digitally controlled oven, quenched in Parks 50, and tempered three times at 400 to give an HRC of 61/62

Both have a full flat grind with a convex edge on the last 1/8" of the blade down to .007, then sharpened on my paper wheels.

Both have dovetail bolsters with two peened pins per bolster and three 1/8" hidden pins in the scales, and then sealed with West Systems G-Flex epoxy.

Both have a forced patina. I couldn't get a finish I like on the Jade knife, but both are hand sanded to 600 grit.

Jason, these are knives to be proud of ! And a very good deal for the buyer as well.
I have 5 custom Chefs knives so i cannot justify buying another one.
A Chefs knife is the most satisfying custom to buy. I use mine every day and i look forward to food prep as it's a chance to enjoy using a custom knife.
Since you have to do food prep anyway, get a knife that makes it enjoyable.

I always love jade green but that second knife is just awesome. If I cooked more than 6 times a year I'd be on that one.

You have a nice eye for profiles. Great prices, too. I know how much work goes into doing a grind like that, not to mention the hardware on the handle.
 
Thanks everyone for the comments. Now if someone would just buy it I could get that new Smith & Wesson I've had my eye on :)
